Alfredo sauce is one of my favorite pasta sauce. It is oh so yummy!! So creamy and bad for you. :)

None of the premade alfredo sauces in the grocery stores are very good for you. At least not that I’ve found. They all have lots of extra ingredients that, in my opinion, aren’t necessary.
Anyway, I looked around the internet to find a recipe. I found a few, but not one that I liked completely. So, I made one up that was pretty darn pleased with. I hope you like it too!
Ingredients:
- 1/2 cup sour cream
- 1 cup milk
- 6 oz. parmesan cheese
- 8 0z. cream cheese (one block)
- 2 cloves minced garlic
- 1/2 t pepper
- 3/4 cup pasta water (as needed)
In a saucepan, meld the sour cream, milk, parmesan cheese and cream cheese into an ooey gooey yumminess on medium to low heat. When all of that is about half way through melting, add the garlic and pepper. Continue to allow this mixture to melt, stirring every so often to mix it all together and make sure it’s not sticking to the pan.
If it ever starts to bubble, just turn down the burner a tad.
While that is cooking, go ahead and cook your pasta. When your pasta is done cooking, before you drain the water, scoop out about 3/4 cup of the water.
Take that water you scooped out and use pour it into your sauce pan with the alfredo sauce to get the sauce to the consistency you prefer. I used 1/2 cup and it was perfect.
I also put some asparagus on top of my boiling pasta and steamed it while the pasta was cooking. (only about half the time though… it will get too soft if you steam it the whole time)
