My Brother Joe’s Cheese Ball Recipe

I’m sharing this recipe with you all that my brother just made for all of us.  I will warn you, this is NOT good for you… but it is yummy! And, I personally think it’s okay to cheat during the holidays.

Here’s what you need:

  • 3 cream cheese block (8 oz. each)
  • 1 1/2 packets Onion soup mix (or Ranch flavored if you can find it without MSG… Joe said he would have preferred Ranch, but he couldn’t find any without MSG)
  • 6 in. log of summer sausage (chop it up as fine as possible)

This is a messy recipe!  First you will use your hands to mix the packets of soup mix or ranch mix with the cream cheese.  Once that is completely mixed, take half of your summer sausage and mix it in with it.

Okay, now you have a ball with cheese, soup mix and meat. Next you will spread out the rest of the meat on your work space. Take your cheese ball and roll it around on the meat until it is completely covered. After you roll it around a few times, you may have to pick up some meat and actually place it on the ball.

That’s it!  Put it on a platter and surround it with your favorite crackers.

Or, do as we did, and put it in a big bowl and throw the crackers haphazardly around it. :)

Admittedly, we had already eaten a few bites off the top, so that’s why there is very little meat on the top of it. Sorry… we couldn’t help it.
