I love me some crock pot recipes!
Here is one that everyone in our house enjoys.
I got this recipe originally from the crockpot lady. She has many wonderful crockpot recipes. You should check her out. But wait!
First, check out this recipe. I changed it up a bit from the crockpot lady’s recipe to better fit our families needs and wants.
Ingredients: (this will serve 2 adults and 3 children)
- 5 medium to large green peppers (diced)
- 1 cup broth or water
- 1/2 onion (diced)
- 1/2 t. basil
- 1 lb. chicken breasts (about 5 thin strips or 3 breast halves)
- 4-7 oz. can chopped green chili’s
- 1 t. salt
- 1/8 t. black pepper
- 1/2 cup sour cream
- 2 cups rice
Put all ingredients except sour cream in crock pot.
Mix them up a bit and then turn on your crock pot and cook for 6 hours on low or on high for 4 hours.
Cook your rice before the meal is done according to the directions for the rice you are using.
About 10-20 minutes before you are ready to eat, take out the chicken and put on a plate.
Get out your trusty hand blender and blend the ingredients into a saucy consistency.
Add the sour cream. Now, you will use your hand blender again to blend the sour cream with the rest of the sauce. I like to put the crock pot at an angle to do this to prevent splashing. I do this sometimes for the other blending as well, so don’t feel like you have to wait for the sour cream to tip the crock pot.
While your food is warming back up with the sour cream, cut up your chicken into bite size pieces. Add them back into your crock pot and mix.
Now, you are ready to eat! Put some rice on a plate, cover your rice with the food in your crock pot and enjoy!
