I think you all will enjoy this recipe. It seems involved when you first look at it, but really it’s not bad. I’m not a huge fan of time consuming or complicated recipes and this is not that!
Here is what you will need:
- 3/4 Cup Soy Sauce
- 3 T Cornstarch or Flour
- 4 T ACV
- 1 tsp. Sugar
- 1 lb. Flank Steak or 3 Chicken Breasts
- 1 T oil (I used Olive oil)
- 3 med to large green bell peppers (I’ve also used 10 oz. broccoli and it was good, but we prefer peppers)
- 1/4 t. ginger
- 1 1/4 cup water
- 1 cup cooked rice
First thing you will do is put your rice on the stove to cook if it isn’t already cooked. We use brown rice that takes 45 minutes to cook, so this is always the first thing I do.
Next, prepare your marinade. You will simply mix all the marinade ingredients in a bowl.
That’s it, now you can cut up your meat into bite size pieces and put it in the marinade. Make sure all the meat is covered with the marinade. Don’t be afraid of getting your hands messy to get the job done.
Okay, now cut up your green bell peppers into bite size pieces as well. Then, put them in a pan and cook them in a tablespoon of olive oil for a few minutes. You will cook until they are cooked, but still a bit crispy.
Once cooked to your desire, take them out of the pan and put them on a plate.
Then poor your bowl of marinade and meat into the pan and add your ginger and water to it and mix it up.
While the meat is cooking, it’s okay for the marinade to bubble a bit, but don’t have it so high that it’s boiling. Also, make sure you stir it ever so often so that it doesn’t stick to the bottom of the pan.
The meat won’t take long to cook since it is cut up in small pieces, so don’t go off and forget about it. :)
Once the meat is thoroughly cooked, add back in your green peppers and let it all meld together for a few minutes.
Now it’s ready to eat, because while you were doing all that, your rice was cooking and it should be done right now!!
And, voila! The finished product!
