Egg salad is a simple meal you can make ahead to have when it is convenient for you.
Here is what you will need:
- 12 boiled eggs
- 1/4 tsp. salt (or more… to taste)
- 1/8 tsp. pepper
- 1/2 cup mayo
- 4 celery sticks, diced small
- 1/4 onion, diced small
Cut up your boiled eggs into small pieces. I do this by just putting the eggs whole into a bowl and then taking a fork and knife and cutting them up right there in the bowl. It works well and you don’t have to worry transferring it from cutting board to bowl and losing your yolk by it sticking onto the cutting board!
All you do now is take all the ingredients and stir them together in the bowl.
Now you may eat it as you please.
We like it as sandwiches. We toast the bread and put some spinach or romaine on the toast, maybe a couple slices of tomato, top it with the egg salad and enjoy!
You can also spoon some into a hollow bell pepper (whatever color you choose) or tomato for a grain free alternative.
This is the simplest egg salad. You can also add some garlic powder, green pepper, or any other vegetable you like. Get creative!
