If you need a something to take to a picnic or some other type of pot luck, look no further! This will be the hit of the party.
I know, because I have brought it to parties and I had so many requests for the recipe!
Here is what you will need:
- 8oz. cream cheese (one block)
- 8oz. pepper jack cheese (cut in pieces)
- 1/2 cup sour cream
- 1/8 tsp. pepper
- 1/4 tsp. salt
- 2-3 cloves minced garlic (as you can see from the picture… I cheat.)
- 10-14 oz. artichokes
- 2-3 handfuls of spinach (I have also used kale and it was yummy.)
I have made this in shallow glass pie dishes before and it worked fine, but I prefer to use my 9 in round casserole dish. This way, when I go to stir at the end when the spinach is in it, I have plenty of room. You’ll see what I mean when you get to that step.
First take your cream cheese, pepper jack cheese, and sour cream and put in the an oven that is preheated to 350 and set the timer for 10-15 minutes.
We want the cheeses to melt.
While the cheese are melting, get your artichokes ready. First thing you need to do is drain them. We don’t want all the juices they were sitting in.
Now, you can totally just take them straight from the can or jar, but I like to cut them up into smaller pieces so it covers more of the dip.
While you are doing that, check on your cheese in the oven. We don’t want it to start getting crispy on the edges, so if that’s happening, take it out and stir it and then put it back in the oven.
After the 10-15 minutes in the oven, take it out and add all the rest of the ingredients.
It will be difficult at this point to stir in the spinach. Just put a bit of other stuff on top of it and that will be good for now.
Put it back in the oven for a couple of minutes.
Now you will be able to take it out and stir it so the spinach is completely combined with the rest of the ingredients. Make sure all spinach is covered, otherwise it will cook crispy.
Once it is combined well, put it back in the oven for the final 3-4 minutes to all it all to completely meld together.
Take it out of the oven and stir it one more time and then serve!
If you will be taking this to a party, you will need to bring a small crock pot with you and put it in there so it stays warm during the party.
Don’t forget to bring chips and/or veggies for the dip!
