Jalapeno Cheese Bites

I love me some jalapeños!  And this is the perfect little snack/appetizer for the jalapeño loving gal!

Before I post recipes on my blog, I like to see if a billion bloggers have already posted it.  I really only want to give you stuff that you can’t find lots of other places. So, I went to Pinterest to see if I could find it.  I only found a couple of other sites that posted it and it wasn’t exactly the same.

So… I thought I made this recipe up, but apparently it already existed.  Or at least it sort of does.

I think my way is a little easier than the other ones that I saw and they named it something else too…

I love jalapeño cheese bites, because that’s what it is… a yummy bite of jalapeño cheesy goodness.

They are super easy.  All you need is…

  • shredded cheese (I used cheddar, but you could use whatever cheese you please)
  • sliced jalapeños (from a jar, not fresh)
  • cookie sheet

That’s it.

Now, I didn’t measure anything with this, so just go with me.

Put the cheese in little piles on the cookie sheet. (Maybe a tablespoon??)

Then put one jalapeño slice on each pile.

Then put a little more cheese on top.

Did I mention I love cheese??  Well, I do.  Now ya know.

Alright… now pop the cookie sheet in the oven And broil on high for about 3-4 minutes.  When the cheese has a bit of brown to the edges, take it out.  Let it set for one minute (if you don’t let them set, they will not come off the cookie sheet as well… be patient) and then take them off and take a bite!

    I’ve made these in the past and they are delicious! I have since cut dairy from my diet, but my oh my, do I miss these. If you like a little spice in your life, try it with Mexican cheddar cheese….delish! Sometimes I’ll put a dab of hot sauce too.
